At Hanabusa, we serve Edomae Zushi that is based in tradition,
but made to suit the current trends and tastes of our customers. Using our original creativity,
you will experience a variety of flavors that only we can offer.
Above all else, the two things we strive to do are bring out the flavors of all our ingredients to the highest measure and satisfy you, our customers.
We opened on March 31, 2015.

Chef Hideki Nakajima trained for 23 years at Yanagibashi Miyako Zushi, one of the oldest Edomae Zushi restaurants established between the end of the Edo Period and the start of the Bunka Period. He trained under the 4th owner, considered one of the masters of sushi, and the 5th owner.
In March of 2015 he started his own restaurant, “Edomae Zushi Hanabusa.”
He also has experience preparing traditional Japanese food and a license to prepare blowfish.
